Family Recipes: Healthy Dinners in 20 Minutes or Less
As a parent, you’d like to serve your family nutritious meals but between busy days and extracurricular activities, it can be tough to actually make this happen. Luckily, with a few simple tips and tricks, it’s possible to get dinner that you can feel good about on the table fast. Here are some of the ways we make healthy meals in 20 minutes or less:
OUR FAVORITE HEALTHY 20 MINUTE MEALS
Amy: “A quick healthy meal we have often is “make your own salad”. I’ll put out a bunch of ingredients on the table and everyone picks what they want to eat. A spin on this is a taco or burrito “bar” where you put out the ingredients and let them make their own. Essentially. any food that allows each family remember to “make their own” can be achieved in less than 20 minutes and it also results in less complaining since the kids get to choose their favorite ingredients.
Mary:“20 minutes?! Even the easiest meals take longer from start to finish, but I also like to cook meals from scratch. We like making pizza; my homemade pizza takes 18-minutes to cook.”
Media Mom: “I think keeping the sides simple is key. Lean hamburgers or turkey burgers are easy to cook quickly. We either use our outdoor grill, or a cast iron indoor grill pan. We will also use lean ground beef or ground turkey for tacos. Fish takes slightly longer than 20 minutes to bake, but I have to add it to the list because there’s almost zero prep time involved. I will also prepare 2-3 nights worth of salad at a time, and we dress it ourselves at our plates. The kids actually don’t even like dressing. Go figure! And I keep peas and edamame in the freezer and can steam ten in the microwave in 3-4 minutes. I may also simply slice an apple pear or orange as well.”
Lindsay (Blog Editor):“Breakfast for dinner. When I need something quick, I make these Mini Omelette Muffins. It’s a fun twist on eggs and a good way to get in some veggies.”
