Family Recipes: Red Velvet Crinkle Cookies
Looking for a new cookie recipe? Our colleague, Aili, recently treated us to these Red Velvet Crinkle Cookies. Mmmm mmm, red velvet in the form of a crinkle cookie, what could be better? Our mouths watered just looking at them. These beauties are too pretty not to share; they’d be great to bring to a holiday party or family get-together and would even make a sweet gift for teachers. (And, alright, we’ll come clean, we’re also bookmarking them for Valentine’s Day. Sure February seems like it’s a ways off, but it’ll be here before we know it!) Here’s how to make them, enjoy!
RED VELVET CRINKLE COOKIES
Ready in: 1hr
- 6 tablespoons butter
- 1 cup powdered sugar
- 1 teaspoon cornstarch
- 1 (18.5 ounce box) Dunkin Hines® Red Velvet Cake Mix
- 2 large eggs
- 1 teaspoon lemon zest
Preheat oven to 375 degrees F. Melt butter; set aside to cool. Place powdered sugar and cornstarch in shallow dish. Mix with a fork to blend.
Place cake mix, cooled butter, eggs and lemon zest in large mixing bowl. Mix by hand until well blended and a dough forms.
Form dough into 1-inch balls and roll in powdered sugar. Place on cool, ungreased baking sheets about 2 inches apart.
Bake, 1 sheet at a time, in center of oven for 9 to 11 minutes or until set. [Editor’s Note: From experience, Aili recommends baking them for 8-9 minutes.] Cool 1 minute. Transfer to wire rack to cool completely.
Store in airtight container with wax paper or parchment separating layers.
