Single Serving Cookie Dough

Single Serving Cookie Dough

Single Serving Chocolate Chip Cookie Dough. Um. Yes please. When I found this recipe, I instantly thought, ‘how come I didn’t know about this sooner?’. It’s genius.

On a recent cozy night in, I was in the mood for cookie dough but didn’t want to commit to making a whole batch of cookies only to have that many sweets linger in the house afterward. (Perhaps you can relate.) And I came across — OK I googled — a single serving cookie dough recipe and voila, Jessica’s recipe on her site Savory Experiments came up.  As I began to stir the ingredients together, I will admit I was skeptical that the finished product would turn out well. I thought maybe the pared down ratio of everything would throw off the taste (?!) but I have to say it was pretty. darn. good.

So, as Jessica recommends, the next time the house is quiet and the kids are in bed, consider mixing yourself a bowl of — your very own — chocolate chip cookie dough.

As far as we can tell, this particular recipe doesn’t come with baking instructions but this similar recipe from Number 2 Pencil does: http://www.number-2-pencil.com/2012/09/30/perfect-single-serving-size-chocolate/. (Something to keep in mind: An egg yolk is needed in this *baked* version in order to bind the cookies and make them crispy after baking.) If end up trying either recipe, let us know how it turns out!
