Summer Recipes for Families
On those really hot summer days, sometimes the last thing you want to do is turn on the oven when it comes to meal prep time. Do you have go-to summer recipes that your family enjoys? Our Favorite Summertime Recipes for Families
Amy, Nourish Mom: A family-favorite summer recipe in my house is build-your-own salad. I cut up a bunch of ingredients – lettuce, peppers, cucumbers, cheese, sausages, croutons, etc. – and let everyone make their own salad. There is a lot less complaining those nights for sure, except when all the fresh Mozzarella balls are taken. We also love fresh veggies, especially corn, from the farmers market. So, we have a lot of easy grill nights with chicken or burgers on the grill with a side of fresh veggies.
Media Mom: I have two favorites: Recipe #1: Buy a great seedless watermelon. Slice and enjoy! Ok – here’s a tip. Slice slightly thick but small wedges and put a Popsicle stick in the rind so it can be held like a Popsicle. Recipe #2: Put a marshmallow on a stick. Hold it over a campfire roast to desired toastiness. Slide between two graham crackers with a piece of chocolate. So, I may not be a chef, but these are my favorite summertime treats!
Allison: One ingredient banana ice cream! Rookie Mom shared this easy-to-make ice cream recipe two summers ago and my daughter & I have been hooked ever since. We also love this homemade frozen yogurt recipe from Chocolate-Covered Katie. Ingredients: 3 cups plain, vanilla or flavored yogurt / sweetener to taste (the finished product will be less sweet, so be sure to make it a little too sweet before freezing) / optional: 1 tsp pure vanilla extract if not using vanilla yogurt. Instructions: Stir all ingredients together, put the mixture into the freezer for 20-40 minutes depending on your desired firmness.
