What to Make with Pumpkins?
I’ve been so busy with work, with family and with my oldest child’s transition into kindergarten I barely have had time to notice that fall has arrived. Until, of course, my CSA farm share starting showing up with apples, carrots, beets, butternut squash, and pumpkins…beautiful pumpkins.
And they are simply lovely and look so festive on my kitchen counter. But I feel a bit of “eat local” guilt if I only use them as ornamental home accents. I can’t say I have a ton of experience cooking with fresh pumpkins. I once made a pumpkin pie from scratch – fresh crust, fresh pumpkin, local cream, etc. My sister told me she liked pie made with the canned stuff better. Ugh! All that work to make in my opinion the BEST pie ever (even if it wasn’t).
So this time I’m going to Pinterest for pumpkin “pin”spiration. Here are a few of the recipes I’ve found so far.

Pumpkin Bars with Cream Cheese Frosting (a classic!)
Pumpkin Spiced Donuts (baked not fried)
Pumpkin Smoothie (ignore the canned puree in the picture – haha!)
